How to enjoy your barbecue

I used to love eating barbecued food but I stopped when I was told that grilling meat at high heat from an open flame creates cholesterol oxidation products (COPs) and heterocyclic amines (HCAs) which are highly carcinogenic.

Now I just found out that the way I marinate the food is actually safe and healthy. A marinade of 10 percent plain soy sauce and one percent sugar has been found to cut the production of COPs by more than 60 percent. (J Agric Food Chem 06;51(13):4873–4879). Research also shows that adding tart cherries, red grapes, or plums (all good sources of pigmented antioxidants) to hamburger meat can cut HCA formation by 94 percent.

My favourite marinade for chicken
Sliced ginger
Sliced garlic
Sliced big onion
Soya sauce
Dash of cooking oil

Mix all ingredients and chicken pieces in a bowl. Marinate for at least three to four hours in the refrigerator. The addition of ginger and garlic provides you with some healthy blood pressure benefits as well.

If you do not want to barbecue the chicken you can fry or bake the chicken which is just as tasty.
