Christmas Turkey
Many people do not like eating turkey breast meat as it is usually quite dry. There are however 2 ways to get moist turkey breast meat.
One way is to roast the turkey with the breast facing down. This way the juices from the turkey will go down into the breast during cooking, making it soft and moist.
The other way is to place strips of streaky bacon on the breast and the juices from the bacon will drip into the turkey breast making it soft and moist. Using bacon also gives the turkey additional flavour. Once the turkey is done, grill the bacon until it is crispy and then chop it up and sprinkle over the stuffing. This is my favourite way to roast a turkey or chicken.

Cover the turkey with foil and place in the oven. Half way through open the foil and baste the turkey using the juices in the roasting pan
